The kind of person who will excel as a Yacht Chef

Dean: Of course it’s important to be creative with your food, but the number one person who does well as a Yacht Chef, is someone who is tidy, adaptable and flexible. It’s also really important to be fun to be around. Look at this Cabin, it’s perfectly comfortable, and believe it or not this is quite a big cabin, but you can imagine that if you were sharing this space with someone unpleasant it would get pretty old pretty quickly.
So by all means focus on your food, but really focus on being pleasant to be around. Working on a yacht you’re a roommate as well as a Chef.
That means being tidy, if you look around I don’t keep it to military specifications but I do keep everything nicely put away. On boats we have a saying, everything has a place, and every place has a thing.

Adaptability is also right up there along with flexibility, wealthy people change their minds often, and the plan will change hour by hour. This is really different from working in restaurants, where I know things happen quickly, but more or less everything goes to plan. You may have gotten up early and been preparing Sunday Roast all morning just to have the Principle Guest invite 20 people over for sunday football and fresh pizzas. You got to make it happen.

But never forget that you live and work with these people, and ultimately if they have to choose to work with Gordon Ramsey, or a guy that always is good for a laugh and doesn’t skip his rounds at the bar they’ll probably choose the later!
